Your New Go-To Mediterranean Dinner
Growing up in the Mediterranean, seafood dinners were my mom’s weeknight staple.
Because let’s face it, fish cooks quickly, and you don’t need to do much to it.
This Mediterranean Baked Cod is exactly that.
I roast tomatoes, garlic, and olives in olive oil, then add the cod on top for a quick bake in the oven.
Easy, fresh, and filling. Add a simple green salad and call it dinner.
