Dinner as easy as it gets.

Your New Go-To Mediterranean Dinner

Growing up in the Mediterranean, seafood dinners were my mom’s weeknight staple.

Because let’s face it, fish cooks quickly, and you don’t need to do much to it.

This Mediterranean Baked Cod is exactly that.

I roast tomatoes, garlic, and olives in olive oil, then add the cod on top for a quick bake in the oven.

Easy, fresh, and filling. Add a simple green salad and call it dinner.

What else you need to know?

  • 32 grams of protein per serving
  • Works with fresh or thawed frozen cod
  • No cod? Haddock or halibut both make great substitutes

Seafood is In My Roots

They say you can take the girl out of the Mediterranean, but you can’t take the Mediterranean out of the girl.

I grew up with fish on the table several nights a week, and recipes like this baked cod are second nature to me.

If you’re looking for more seafood dinners with the same fresh, simple spirit, you’ll find plenty more in my Seafood Recipes collection.

As always, feel free to check out all these recipes and hit reply if I can answer any questions.
